Oreos are one of those biscuits that just make life complete, how could you possibly say no to the chocolatey goodness and that creamy filling? Add a delicious brownie textured sponge to the equation, and you have heaven on a plate.
This cake is my ultimate favourite birthday cake, it has the chocolate, the most amazing buttercream and a gooey cake sponge, exactly like mouthwatering brownies. It’s one of those desserts that are extremely sickly, but you just have to keep going because your mind is awe with its flavour.
For the cake:
250g Self raising flour
250g light brown soft sugar
250g dark chocolate
For the filling and topping:
154g pack of Oreo cookies
300-400g sifted icing sugar
3 drops of vanilla extract
1-2 tablespoons of milk
Firstly, preheat the oven to 160 Celsius (Fan) or 140 Celsius, gas mark 3. Grease and line 2x20cm cake tins.
Mix flour, sugar and cocoa together. Then melt your chocolate and butter together in the microwave. Beat this along with the eggs and then add to the dry ingredients.
Pour the mixture into your tins and evenly spread. Bake for 40 minutes and transfer onto a wire rack to cool.
To make the buttercream beat the whisk the butter until creamy and add 300g of the icing sugar and vanilla extract. If the mixture is dry, add some milk and if it goes too wet then add more icing sugar.
Blend all of the Oreo cookies together and mix half of them into the buttercream, put the other half to one side.
Spread the buttercream between the two cakes when they’ve completely cooled and spread the remaining buttercream over the top. Sprinkle the remaining Oreos on top for decoration. Enjoy!
And there you have it, a simple yet delicious cake that’s not too difficult. This is perfect for any occasion and it serves about 12 people. I’d recommend serving with a little bit of ice cream as it goes so well with the brownie-like sponge. Can you resist the temptation?
