We’ve gone through the banana bread phase and it seems to be now wearing off. I mean, there’s only so much banana bread you can eat, right? Instead, we’ve swiftly moved onto the new food ‘craze’ which appears to be whipped iced coffee. This is one that won’t die as quickly. Everyone loves their morning coffee and with the temperatures soaring at the moment, a refreshing iced drink is in order. So, here is how to make that beautiful whipped iced coffee with the use of only 3 ingredients!
You will need:
2 tablespoons of fine instant coffee
2 tablespoons of caster sugar
One teaspoon of vanilla extract
2 tablespoons of hot water
An electric whisk
Take a medium sized bowl and and weigh all of the ingredients out. Once all of the ingredients are in the bowl, take two of your favourite glasses and pop them in the fridge to cool.
Next, you’re going to want to take your electric whisk and whisk away! It’s vital that you have patience. At first I thought to myself ‘this is never going to thicken up’. You need to persevere and keep going. It may take 5-7 minutes and if you’re doing it by hand, it will take a lot longer. The mixture will start to become lighter in colour and it will start to form into a fluffy consistency.
Put your whipped coffee mixture to one side. Take your glasses out of the fridge and fill with plenty of ice and milk. This can be any milk of your choice, whether that be vegan options or standard cows milk. Ensure you don’t fill the glasses all the way to the top, leave some space as you’re going to need some room.
Take a decent sized tablespoon and dollop the whipped coffee mixture on top of the milk and ice. It should sit nicely in place and look like something you’ve just been handed at Starbucks. If you want extra flavour you can customise it to your taste. I added some Sugar Free Caramel Fudge Waffle Cone Syrup by Jordan’s Skinny Mixes. Pop in a straw and voila, you’re good to go!
