Conscious Chocolate Cookies + Giveaway

Love chocolate? Indeed, you do, who doesn’t? Which means you’re going to love this post, I promise. Chocolate is one of those things that makes everyone happy, if you’re sad you should eat chocolate if you’re angry you should eat chocolate, it’s just that one thing that makes everything better. So if I said there’s an alternative chocolate bar that is healthier but tastes just as good, it sounds like a dream come true, right? Well, I’m about to solve all of those post guilt feelings with Conscious Chocolate.
So who are these magical people?
Conscious Chocolate is a UK based company that make mouthwatering handmade chocolate bars, made from quality organic and raw products. Their chocolate combines purity and health without compromising taste; they believe everyone should enjoy chocolate, regardless of dietary requirements! With an impressive selection of flavours, you’re spoilt for choice, from cherry to nutty, you can let your taste buds wander, with unique names such as ‘Wild’ and ‘Dark Side’ you’re left wanting to try them all. I was sent an essential mixed box of goodies from the lovelies at Conscious chocolate so decided to put my baking skills to the test, here’s how to make Maryland cookies, Conscious style.
What you’ll need:
(Makes 20-24)

125g butter, at room temperature
90g caster sugar
1 egg yolk
1 egg
1tsp vanilla essence
1/2 cup milk
90g chocolate chips (any you like)
2 bars Conscious Chocolate
Step 1
Preheat the oven to 180 Celsius (Gas mark 4) and grease two baking sheets.
Step 2

In a large bowl, beat together the butter and sugar until pale and creamy. Add the egg, egg yolk, vanilla essence, flour milk (not too much) and half the chocolate chips. Mix until thoroughly combined.
Step 3
Using a tablespoon, place small mounds of mixture on the baking sheets, spacing them out to allow room for spreading.
Step 4

Cut your Conscious Chocolate bar into squares (I used Mint and Orange) and press one into each of the mixture mounds. Next, get place another tablespoon of mixture on top to cover the chocolate, make sure it’s fully covered to prevent spillage.

Step 5
Bake for 10-15 minutes until golden. Leave the cookies on the baking sheet for 2 minutes to firm up and then transfer to a wire rack. These are best served warm when the chocolate is melted in the middle.

Voila! There you have it, your perfect melt in the midst Conscious Chocolate cookies! You can use any chocolate, and the great thing about this recipe is you can adapt it to your liking.
