I love baking, it’s something I enjoy doing every so often and my most recent recipe was chocolate macadamia cookies! I love filling the house full of sweet chocolatey aromas that linger and makes your tummy rumble and this recipe definitely did that!
To make 12 large cookies, here’s what you’ll need:
Step 1 – Preheat the oven to gas mark 4 / 180 Celsius and line a baking tray. Coarsely chop the milk and white chocolate and put them in a bowl. Set aside.
Step 2 – Chop 200g of the dark chocolate into large chunks.
Step 3 – Break up the remaining dark chocolate and melt it in a bowl, over a pan of boiling water. Remove from the heat when smooth then add the butter, vanilla essence and sugar.
Step 4 – Add the flour and milk and then mix it all together. Add half of the dark chocolate and all of the milk and white chocolate. Then add the nuts and fold together.
Step 5 – Spoon 12 mounds of mixture onto the baking tray. Press the remaining dark chocolate into each cookie and bake for 12 minutes.
If your mixture doesn’t stick together very well, then keep adding milk to the mixture because it may be a little dry. Overall I was so impressed with the results, they look delicious and taste incredible. In a matter of hours, the whole household were picking at them. Cheap, easy and fun to make, you can get everyone involved.
